Bước 1: sơ chế cua
Để cua không bị rụng càng, bạn cần làm cua chết trước khi luộc, và để lấy tiết cua cũng dễ dàng hơn Để cắt tiết cua, bạn chỉ cần dùng đầu mũi dao nhọn hoặc mũi kéo đâm nhẹ vào phần đầu tam giác của phần yếm cua rồi giữ nguyên trong vòng 1 phút thì cua sẽ chết.
Sau đó, bạn mới mang cua đi rửa sạch bùn đất, để tránh bị cua kẹp trầy sước tay. Có thể rửa cua bằng nước muối để giảm bớt mùi tanh.
Bước 2: Luộc cua
Cho cua vào nồi, đổ nước sâm sấp mặt cua sau đó cho thêm, vài lát gừng đập dập, 2 cây sả ở trên. Sau đó bắt lên bếp và bật lửa nấu.
Chờ đến khi nước sôi, luộc cua thêm khoảng 5 – 7 phút, vỏ cua sẽ chuyển sang màu đỏ. Lúc này cua đã vừa chín tới. Để cua thêm vị ngọt đậm đà, bạn có thể bỏ một ít bột ngọt vào nồi, không nên bỏ nhiều sẽ mất vị ngọt tự nhiên của cua.
Sau khi cua được chín, tốt nhất bạn nên thưởng thức lúc còn nóng mới ngon. Bởi nếu cua nguội đi sẽ không còn thơm ngon mà rất dễ có mùi tanh. Chấm kèm với muối tiêu chanh hoặc nước tương đều được nhé.
